New Poll – Salted or unsalted butter when baking

I guess all the TV cooking celebs always say you should use unsalted butter when you bake. My mom and I have always used salted, but this Christmas we made a couple of favorites with unsalted. We did not like them nearly as well. The cookies tasted really flat compared to what we are used to. I don’t think I would do that again.

So that made me curious… Do you use salted or unsalted butter when you bake?

I’d like to hear from your readers about cookie presses after spending a frustrating afternoon trying to make spritz with a cheap plastic gun.

All you cookie press people out there… Any suggestions?

I have a couple of nice cookie presses that are metal of some kind, inherited from my grandma.  They are like the one my mom has used as long as I can remember.  Has anyone bought one recently they would recommend?

Many, many blessings to Lizzie who left a comment about simplifying meal planning. You reunited me with a long lost friend!

I went to Lizzie’s blog and while browsing I saw she had a link to Steph’s Country Kitchen Goodness. If that sounds familiar to you it is because I have shared some of her recipes here, always lamenting that she took her website down a number of years ago. I’ve Googled it numerous times over the years, wondering if she would ever put it back up. It was one of my very favorite websites a looooong time ago (like previous century!).

Well, her site is up again and it was like visiting a long lost friend. The only thing missing is the midi music on some of the pages. I especially liked it on the Fall and Winter pages. Maybe she’ll add it someday…

Well, anyway, I saw this as a real personal blessing from God. It had been a long morning with Caroline (she got up at 5:00 instead of her normal “late” rising time of 6:15) and I had just had a good long cry when I found this on Lizzie’s blog. Then when David got the mail when he returned from a business appointment, he discovered one of his clients had sent him a Starbucks giftcard as a thank you.

I’m just very thankful. :-)

Homemade Taco Seasoning Mix

It has been several years since I switched from those little packets of taco seasoning to making my own. I found this recipe in The Complete Tightwad Gazette (page 423) and it is very good. I recently bought one of those little packets of taco seasoning because it was a loss leader and I had a coupon so it was basically free. I made tacos with it. Blech. Give me the homemade mix every time.

6 tsp chili powder
4 and 1/2 tsp cumin
5 tsp paprika
3 tsp onion powder
2 and 1/2 tsp garlic powder
1/8 to 1/4 tsp cayenne pepper

Mix all the ingredients and store in an airtight container.

My thoughts: When you make the tacos, add the amount of seasoning appropriate for your taste. I usually also add some salt to taste.

Pecan Pie Mini Muffins

I believe this is a Country Woman magazine recipe I found on a discussion board somewhere. I made them for the first time a few weeks ago and they are YUMMY. Pecan pie is one of my favorite desserts ever and these just about meet that craving.

1 cup packed brown sugar
1/2 cup flour
1 cup finely chopped pecans
2/3 cup butter, melted (no substitutes)
2 eggs

In a bowl, combine brown sugar, flour and pecans; set aside. Combine butter and eggs; mix well. Stir into flour mixture just until moistened.

Fill greased and floured miniature muffin cups 2/3 full. Bake at 350 degrees for 15-18 minutes or until muffins test done. Remove immediately to cool on wire racks.

Additional note: I think the next time I make them I will add a touch of salt and vanilla. I think it might make them even better. Enjoy! :-)

Cranberry-Orange Nut Bread

I made this for the first time last weekend when my in-laws came for brunch. It is very moist and flavorful. I found it in The King Arthur’s Flour Bakers Companion, a big wonderful baking book I bought a few years ago.

2 cups unbleached all-purpose flour
¾ cup sugar
1 and ½ tsp baking powder
½ tsp baking soda
¾ tsp salt
1 orange, zest and juice (or 1/8 tsp orange oil and ¾ cup orange juice)
¾ cup buttermilk, sour cream or yogurt
1 large egg, beaten
3 tbsp vegetable oil
1 cup cranberries: fresh, frozen, or dried, roughly chopped
½ cup chopped nuts (optional)

Preheat oven to 350 degrees F.

In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In a medium-sized bowl, combine the orange juice and zest, buttermilk, egg, and vegetable oil. Add the wet ingredients to the dry in the bowl and mix until evenly combined. Stir in the cranberries and nuts, then pour the batter into a greased 9×5-inch loaf pan. Bake the bread for 55-65 minutes, until a tester inserted in the center of the loaf comes out clean and the bread starts to pull away from the edges of the pan. Remove it from the oven and cool on a rack for 15 minutes, then turn it out of the pan to finish cooling. This loaf will slice better if wrapped when cool and left to rest overnight before serving.

When I made this, I used Craisins, dried buttermilk (made with water), pecans, and freshly squeezed orange juice with orange extract.
